Swiss Grilled Cheese with Caramelized Onions, Baked Asparagus Fries & Lemon-Garlic Sauce

I’m excited to be posting these recipes, it sounds like a lot of different components but believe, me it is super easy to whip up and the combination is delicious!

The lemon garlic dipping sauce is a delicious easy sauce that would be a great condiment for any snack.

I have broken each part of the recipe into mini-recipes so that it makes it easier to make each item separately. It’s like 3 new recipes in one post! I hope you enjoy!

Chase’s Take: I ate all the asparagus! (Asparagus is not his favorite 😉 )

 

 

Here’s what you’ll need for the Caramelized onions:

**One onion makes enough for about two sandwiches

Onion

Butter

Olive Oil

Salt & Pepper

  1. Slice the onion in half and then slice into thin half ring pieces (about ¼ in thin)
  2. Melt 1 T butter with about ½ T olive oil
  3. Cook onions on med-low heat and stir occasionally
  4. When onions are transparent and caramel in color, they are done (about 20 mins)

 

Here’s what you’ll need for the Swiss Grilled Cheese (Per sandwich):

2 slices of thick white bread (homemade is best)

5 slices of ultra-thin swiss cheese slices

Butter

Caramelized Onions (about half an onion per sandwich)

  1. Start by buttering one side of each slice of bread
  2. Heat skillet on med-high heat and lay the buttered side of one half of bread on the skillet
  3. Layer on 2 slices of cheese, caramelized onions, and then another two to three slices of cheese on the onions. Then place the other slice of bread on top, buttered side up.
  4. When the bottom piece of bread is toasted, flip the sandwich and cook until toasted and cheese is melted on the other side

Here’s what you’ll need for the Asparagus Fries:

1 bunch of Asparagus

2 eggs

1 cup of Panko bread crumbs

Salt & Pepper

 

  1. Pre-heat the oven to 425 degrees
  2. Wash the asparagus and with each ingredient separated on plates, create an assembly line of asparagus, beaten eggs, Panko bread crumbs mixed with 1teaspoon salt & pepper
  3. Dip each asparagus spear into the egg, then roll into the seasoned bread crumbs, and place on a baking sheet in a single layer
  4. Bake at 425 for 20 minutes or until golden brown

**Note that you may have to mix more of the bread crumb mixture. The ratio is 1C bread crumbs, 1 teaspoon salt & pepper

Here’s what you’ll need for the Lemon Garlic Dipping Sauce:

Mayo (I used the light version)

Olive Oil

½ Lemon

1 clove garlic

Salt & pepper

 

  1. In a blender or food processor, add ½ cup of mayonnaise, 2 T Olive oil, juice from ½ lemon, 1 clove of peeled garlic, and a pinch of salt and pepper.
  2. Puree until smooth and all ingredients are blended together
  3. Chill in the fridge for 20-30 minutes before serving

**This sauce is SO delicious as a dipping sauce for the grilled cheese and the asparagus fries
