Crock-Pot BBQ Chicken Burgers

This recipe is a super simple short-cut to make delicious BBQ chicken burgers! I love making this during the week as an easy week night meal. I like to vacuum-seal and freeze any left-over pulled chicken to re-create this meal another night or you can use the leftover BBQ chicken to make other easy meals such as quesadillas, tacos, or just serve it with some roasted veggies.

Serves 4

Here’s what you’ll need:

4 chicken breasts

8oz chicken stock or light beer

1t garlic powder

1 t chili powder

1  t salt

1/2 t black pepper

1/2 t paprika

1 C BBQ sauce (plus a little extra) *I recommend Stubb’s brand in Sweet Heat or Mesquite flavor

Mayo

1 bunch Cilantro

2 Avocados

4 Hamburger buns

Cheese (If desired. I recommend mozzarella or smoked cheddar)

 

  1. Place the chicken in the crockpot and season with salt, pepper, chili powder, garlic powder, and paprika
  2. Pour in chicken stock or beer and ½ c barbeque sauce
  3. Cook the chicken on low for 4-5 hours
  4. When the chicken is done, remove the chicken from the crockpot and shred
  5. Drain about half the liquid from the crockpot and add the shredded chicken back in along with the remaining barbeque sauce
  6. Leave the chicken on warm for about 10-15 minutes
  7. Toast the hamburger buns and assemble the burgers with cheese, shredded chicken, sliced avocado, cilantro, and a small amount of mayonnaise.
