Simple Chicken Fajitas

This is one of my favorite recipes! I love it for its big flavor and simple preparation. It is a perfect meal to enjoy during the week or an easy dish to cook for a crowd. I have even thrown it all together  and brought it to my sister-in-law’s to throw in the oven for a night of fajitas and margaritas 😀

Simple Chicken Fajitas

Serves 4

Here is what you’ll need:

2 Large Chicken Breasts (Boneless + Skinless)

2 Bell Peppers (any color works)

1 Red Onion (White will work if this is what you have on hand)

2 Garlic cloves

Olive Oil

Fajita Seasoning (see below for seasoning recipe)

Flour tortillas

1 Lime

*Optional Toppings:

Cilantro

Sour cream (swap out the sour cream with plain Greek yogurt for a healthier version)

Sriracha or hot sauce

Shredded Cheese ( I recommend sharp cheddar or a Mexican blend)

Fajita Seasoning:

1 T cornstarch

2 t chili powder

1 t salt

1t paprika

1 t sugar

½ t onion powder

½ t garlic powder

¼ t cayenne pepper (leave this out if a little heat isn’t your thing)

½ t ground cumin

**I cannot take credit for this fajita seasoning recipe, I found it one day searching through food blogs and it tastes so good! Of course, if a packet of fajita seasoning is all you have on hand, you can always use that to but making your own adds so much flavor!

 

 

  1. Start by slicing all of your vegetables (bell peppers and onions) into ½ inch strips. Mince the garlic cloves and add to the veggies. Set aside.
  2. Butterfly the chicken breasts and slice them into ½ inch strips. Keep the veggies and chicken separate and place each in a large plastic bag or container.
  3. Drizzle about 2-4 T (give or take)olive oil over the chicken and sprinkle in the fajita seasoning. Zip up the plastic bag and massage the seasoning and oil into the chicken. Let both the marinated chicken and sliced veggies chill separately in the fridge.
  4. **For best results, let the chicken marinate overnight or at for at least a couple of hours**
  5.  When you are ready to cook the fajitas, pre-heat the oven to 375 degrees. As the oven is heating up, place the veggies in a 9×13 baking dish that has been lightly sprayed with non-stick cooking spray. Lay the chicken on top of the vegetables and bake for 45-50 minutes. TIP**If adding cheese, you can sprinkle the shredded cheese over the chicken before you bake it. 
  6. Assemble the fajitas by putting a healthy portion of the chicken and veggies into a warmed tortilla and squeezing a slice of lime over the top. Add you desired toppings or enjoy it all but itself!

 

**I like to slice everything and marinate the night before so all I have to do the next day is throw it all into a baking dish and get the night off from cooking!**
