Cowboy Pizza Zucchini Boats

This recipe was really fun to experiment with. You could fill these zucchini boats with just about any toppings but these are perfect when you are in the mood for pizza flavor but may want to go in with a healthier option.

These make great leftovers and perfect meals to pack in lunches. You can also use this same sauce recipe on noodles and it is a delicious spin on regular spaghetti sauce.

Cowboy Pizza Zucchini Boats

Serves 4 (2 zucchini halves per person)

Here’s what you’ll need:

4 small zucchini (8-10 inches long)

1lb ground beef or turkey

14oz pizza or marinara sauce

1- 2.25 oz can of sliced olives

8oz sliced mushrooms

½ c shredded Mozzarella Cheese

½ tsp dried basil

½ tsp dried oregano

½ tsp garlic powder

½ tsp salt

½ tsp black pepper

½ tsp red pepper flakes (optional)

Olive oil

 

  1. Pre-heat the oven to 375 degrees (F)
  2. Cut the ends off of the zucchini and slice them in half, length-wise. Scoop out the flesh and seeds of the zucchini, leaving about 1/8th of an inch of flesh inside the skin. Place on a lined baking sheet and drizzle with olive oil. Bake for 10 minutes
  3. In a large skillet, brown the ground meat and season with basil, oregano, garlic powder, red pepper flakes, salt, and pepper
  4. Chop the mushrooms into small chunks and add to the brown meat. Cook the mushrooms for 2-3 minutes to soften
  5. In the same skillet, add the pizza sauce, and sliced olives. Cook for 1-2 minutes to warm and combine.
  6. Layer the boats with mozzarella cheese and fill them with the cowboy pizza filling and top with more mozzarella cheese.
  7. Bake the boats for 10-15 minutes more

Serve immediately and enjoy!
